Fig and Honey Gin Smash

RASPBERRY HONEY
INGREDIENTS
- 2 C. Fresh Figs, rinsed and halved
- 1 tbsp. Sugar
- 2 tsp. Filtered Water
- 1 tsp. Fresh Lemon Juice
- 1 1/2 oz. Rivi Gin Raspberry Honey Flavored Gin
- 1 1/2 tbsp. Fig Puree
- 1/2 tsp. Honey (or more for taste)
- 2 oz. Ginger Ale
- 2 tsp. Fresh Lemon Juice
PREPERATION
Fig Puree: Combine figs, sugar, water, and lemon juice in a blender and pulse until smooth. Refrigerate for 2-3 days or use immediately. Cocktail: In a cocktail shaker, combine fig puree and honey. Mix with a spoon until well blended. Add ginger ale, gin, lemon juice, and ice. Shake well. Strain into a chilled cocktail glass. Garnish with fig quarters on a skewer.
